El chilote Curanto, Chiloé, Patagonia, Chile

The most traditional dish of the island of Chiloé is the Curanto. Cooked in the ground covered by nalca leaves (Chilean rhubarb), shellfish, meat, potatoes and vegetables are heated for one hour.

The one I have tasted was certainly done in a stew pot, but it was really good!
